This is the meal prep recipe I come back to every single Sunday. Five bowls, 45g of protein each, and they stay fresh and delicious all week. The marinated Greek chicken is the star — bright with lemon, oregano, and garlic.
I've optimized this recipe over dozens of iterations for both flavor and longevity. The trick is keeping the tzatziki and fresh veggies in separate small containers so nothing gets soggy.
Each bowl is a complete, nutritionally balanced meal. High protein, complex carbs from quinoa, healthy fats, and fiber-rich vegetables. This is what eating well actually looks like.

Instructions
- 1
In a large zip-lock bag or bowl, combine olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Add chicken strips, seal, and marinate at least 20 minutes (or overnight for deeper flavor).
- 2
Cook quinoa according to package directions. Fluff with a fork and let cool slightly. Season with a pinch of salt and a drizzle of olive oil.
- 3
Heat a large skillet or grill pan over medium-high heat. Cook marinated chicken 5–6 minutes per side until golden and cooked through. Let rest 5 minutes, then slice or keep as strips.
- 4
Divide cooked quinoa evenly among 5 meal prep containers.
- 5
Top each with portions of sliced chicken, cherry tomatoes, cucumber, olives, and feta cheese.
- 6
Pack tzatziki in small separate containers on the side so the bowls stay fresh all week.
- 7
Refrigerate for up to 5 days. Add tzatziki right before eating.
